I'll admit I was a bit leary of the idea of putting mangos in muffins, but I had a mango that really needed to be used so I figured I'd give it a try. Of course I also had to add in some chocolate chips and I have to say they turned out so good! A perfect summer muffin!
Here's what I came up with:
Mango Banana Muffins
1 cup whole wheat flour
1 cup all purpose flour
3/4 cup of sugar or honey
1 tsp baking soda
1 tsp baking powder
1/2 tsp salt
3 eggs
1/2 cup oil (or melted butter)
1.5 tbsp lime juice (you could use lemon, or just omit it all together)
1 diced ripe mango (the smaller the dice, the better)
2 bananas mashed
1/4 cup milk (I used soy milk but any kind of milk will do)
1 cup chocolate chips (optional)
In a large bowl whisk together the flours, sugar, soda and powder and salt. If using honey instead of sugar add it to the wet ingredients instead
In a smaller bowl mash up your bananas then whisk in your eggs. Add the mango, milk, and lime juice and stir well. Pour wet ingredients into the dry ones, add your chocolate chips and stir until just combined.
Spoon into muffins cups and bake at 350 for approximately 20 minutes or until golden brown.
