2 cups whole wheat flour
1/2 cup wheat bran
3 tsp. aluminum free baking powder
1 tsp. sea salt
1/2 cup organic cane sugar
2 eggs, well beaten
1 cup skim milk
3/4 cup plain yogurt
4 tbsp. extra virgin olive oil
3 ripe bananas
1 cup chocolate chips (optional)
1/2 cup chopped walnuts (optional)
Mix together flour, wheat bran, baking powder, salt, and cane sugar. Add chocolate chips and walnuts.
In a seperate bowl beat together yogurt and eggs, add milk, olive oil, and well mashed bananas. Mix into dry ingredients until just combined.
Spoon into either well greased or paper lined muffin tins. Obviously well greased will add some fat content, but paper lined uses trees, so tough choice!
I love these muffins, and I don't feel bad about eating a few of them. I also don't feel bad feeding them to Kaed who LOVES anything in the form of a muffin.
I find that this batch ends up being just over 12 regular size muffins, so I usually use the extra batter to make about 9 mini muffins which are perfect for little hands or if you just want a mouthful!
